Avocado Salad

I strongly recommend this recipe. My mom got it from the cooking channel & it's really really good. I don't think I'd ever even eaten Avocados before trying this dish.

1 pint grape tomatoes, halved
1 yellow pepper, seeded and ?-inch diced
1 (15 ounce) can black beans, rinsed and drained
? cup small-diced red onion
2 tablespoons minced jalapeno peppers, seeded (2 peppers)
? teaspoon freshly grated lime zest
? cup freshly squeezed lime juice, (2 limes)
? cup good olive oil
1 teaspoon kosher salt
? teaspoon freshly ground black pepper
? teaspoon minced garlic
? teaspoon ground cayenne pepper
2 ripe Hass avocados, seeded, peeled, and ?-inch diced

Place the tomatoes, yellow pepper, black beans, red onion, jalapeno peppers, and lime zest in a large bowl. Whisk together the lime juice, olive oil, salt, black pepper, garlic, and cayenne pepper and pour over the vegetables. Toss well. Just before you're ready to serve the salad, fold the avocados into the salad. Check the seasoning and serve at room temperature.

 
Mmmmm.....I LOVE avocados  :2hearts: will definitely try this, but may use some cucumbers instead of the yellow peppers.


Edit:  ok, just made some over the weekend.  I left in the peppers, but used red instead of yellow, and threw in some cucumbers in place of the beans for that extra crunch.  It was lovely, very refreshing, especially on a hot day.  Thanks Nuray, this one is a keeper!

Yeah, the great thing about this recipe is you can improvise your own version & substitute in your preferred ingredients & it still comes out tasting just as good if not better than the original. I personally like to include canned chickpeas in the place of black beans & my mom likes to sometimes use scallions instead of the red onions the recipe calls for.
